Memorial Day Fun

James and Lyly ordered some cupcakes over Memorial Weekend. I know this post is a bit late but I have been busy.

These are chocolate cupcakes with a white chocolate butter cream frosting.

I made the frosting blue to add a little fun into it.

Angel Food Cupcake topped with Mango

So my father in law gave me some mangos and I wasn't sure what to do with them. But wait ... lets turn it into a cupcake!

Unfortunately this cupcake was not made from scratch. I used a box angel food cake mix. I added a little extra vanilla for more flavor. The frosting was a white chocolate butter cream frosting. Then topped with some chopped mango. Not too bad.

I took it to Tzu Chi for cultivation and it was a it. A few people there don't like sweets and this was perfect. Light spongy cake with some fruit. So Chinese.

Mmmm mmm good!

Ahhh .... these are my favorite cupcakes. They are super fun to make, super fun to look at, and super fun to eat.

To the left is a chocolate cupcake with white chocolate frosting topped with coconuts and a cherry. To the right is a chocolate cupcake with white chocolate frosting topped with walnuts, chocolate and a cherry.
So cute and smells so good. Oh and looks so good in pictures.

Such happy little cupcakes.

Strawberry Shortcake Cupcakes

So I am sitting at home watching some Food Network (who doesn't love that channel?) as my husband looks over at me with a guilty look. He says, "uh my work is having a pot luck on Wednesday and I signed up for dessert." So I guess this means I am making cupcakes.

I looked in the refrigerator and noticed we had some fresh strawberries left over from Mother's Day brunch. I have to stress fresh because all the mothers complained about how sour the strawberries where. Hence there was still extra in the refrigerator.

So a yummy butter cake with white chocolate frosting with diced fresh strawberries were made. This totally reminds of a strawberry shortcake. Hence the name! However, something was missing.

Ah! Much better! A slice of fresh strawberry completed the look. I hope the husband's co-workers enjoy them at the potluck!

Alvina's Birthday Cupcakes

So a friend of mine asked me to bake some cupcakes for her little girls class. She turns 6 today. What a great age! Now every little girl loves pink.



My friend gave me free range on what kind of cupcakes to make. Her only request was for the cake to not be too sweet and to use pink. I didn't hesitate to make chocolate cupcakes. After all, what little kid doesn't love chocolate. I feel a little sorry for the teacher of this class room, but a birthday must include sugar! The frosting is a white chocolate butter cream frosting that I tinted with pink. I think the decorations explain themselves.

I was super happy to hear that the class loved the cupcakes. Music to every cupcaker's ear.

Happy 6th birthday Alvina! I hope it's filled with laughter and pink!
